Method

  1. Brown the sausages

Put a large frying pan or casserole pan over a medium heat. Add the sausages and cook for 6–8 minutes, turning them until well browned all over. Lift them onto a plate; they will finish cooking in the sauce.

  2. Soften the vegetables

Add the onion and carrots to the sausage fat in the pan. Cook gently for about 8 minutes, stirring occasionally. Add the teaspoon of oil only if the pan looks dry.

  3. Add the flavourings

Stir in the garlic, tomato purée, smoked paprika and mixed herbs and cook for about 1 minute.

  4. Make the sauce

Add the chopped tomatoes, drained cannellini beans, the measured prepared stock and Worcestershire sauce. Stir well.

  5. Simmer the casserole

Return the sausages to the pan. Bring to a gentle simmer and cook uncovered for 25–30 minutes, stirring occasionally, until the carrots are tender, the sauce has thickened and the sausages are cooked through with no pink meat in the middle.

  6. Make the mash

While the casserole simmers, put the potatoes in a saucepan, cover with cold water and bring to the boil. Simmer until tender, then drain and leave them to steam for a minute or two. Mash with the butter and milk.

  7. Season and serve

Taste the casserole and add black pepper if needed. Divide the mash between two plates and spoon over the sausage and bean casserole.

Make it stretch

Two dinners from one sausage pack

This two-portion casserole uses 4 sausages. If your pack contains 8, keep the other 4 for Sausage & Tomato Pasta.

The pasta uses the same useful onion, garlic, tomato purée, herbs and chopped tomatoes, so the shared shop works harder without making both dinners feel the same.
