Cook

Method

  1. Prepare the dish

Heat the oven to 190°C / 170°C fan / Gas 5. Lightly grease a small ovenproof dish with the butter.

  2. Mix

Beat the milk, egg, sugar and cinnamon if using in a mixing bowl. Stir in the oats and diced apple, then fold in the frozen berries without crushing them too much.

  3. Rest briefly

Pour the mixture into the dish and leave it for 5 minutes so the oats begin to absorb the liquid. Spread the fruit evenly, keeping any large frozen berry clumps apart.

  4. Bake

Bake for 25–30 minutes until the edges are set, the centre no longer looks liquid and the apple pieces are tender. The middle should remain soft and moist rather than dry or cake-like. Rest for 5 minutes before serving.

Storing and using leftovers

Storage

Because the baked oats contain cooked egg and milk, cool leftovers, cover and get them into the fridge within 2 hours. Use within 48 hours. Eat cold or reheat once until steaming hot throughout.

Ideas

Use an apple that is becoming soft or a partly used bag of frozen berries, provided the fruit has been stored safely and shows no spoilage.
